Why mushroom popcorn at this scale

Mushroom kernels pop into a dense, round ball rather than the winged shape of butterfly corn. That ball has almost no fragile arms to shear off in a tumbler, which is why it is the standard for anything coated: caramel corn, kettle corn, chocolate drizzle, cheese and gift tins. It survives handling, bagging and shipping with far less breakage and fines at the bottom of the bag.

Storage and handling

Popcorn pops because of the moisture sealed inside each kernel, so storage is really moisture management. Keep the pallet indoors, off a cold concrete floor, away from exterior walls and out of direct sun. Keep bags sealed until you need them and reclose partial bags. Stored cool and dry, kernels hold their pop for years; stored in a hot, dry room with open bags they will slowly dry out and start leaving unpopped kernels behind.
