Is hard red the right wheat for you?

Hard red is the bread wheat. It carries the highest protein and the strongest gluten of the common wheat classes, which is exactly what you want when a loaf has to rise high and hold its shape.

  • Yeast bread and sourdough - the default choice for structure and oven spring.
  • Home milling - mill to 100% whole wheat flour, or sift for a higher-extraction flour.
  • Pizza dough and bagels - strong gluten handles long fermentation and high hydration.
  • Cooked wheat berries - chewy, nutty, good in grain bowls and soups.

Hard red versus soft white

Use hard red when you need gluten strength: breads, pizza, anything leavened with yeast. Use soft white when you want tenderness: cookies, muffins, biscuits, pie crust, pancakes. Many home millers keep both and blend to taste. A 70/30 hard-to-soft blend makes a good all-purpose flour for a household that bakes a bit of everything.

Milling, cooking and storage

Mill only what you will use within a week or two. Once a kernel is broken, the germ oil starts to oxidize and whole wheat flour turns bitter within weeks, which is why home-milled bread tastes noticeably sweeter than store-bought. To cook the berries whole, simmer 1 cup in 3 cups of water for about 60 minutes. Store the sealed bag in a cool, dry, dark place; intact berries keep for years under those conditions. Reclose tightly after opening or move to an airtight container.
