Which popcorn should you buy?

I grow three kernels on my farm in Princeton, Kansas. They pop into different shapes, and the shape decides how you pop it and what it's good for. Here's how to pick.

The short answer

  • For caramel corn or kettle corn, buy Easy Pop™ Mushroom. It pops into big, round, sturdy balls that hold a coating. Pop it on the stovetop with oil over high heat, never in the microwave.
  • For an easy everyday bowl, buy Baby White. It is small and tender with thin, delicate hulls, and it is the easiest to pop on the stovetop, in most air poppers or in the microwave.
  • For classic buttery movie popcorn, buy Large Yellow. It is traditional butterfly popcorn, big and fluffy, and our top pick for hot-air poppers.

How to pop it

Whatever you pop in, you're done at 2 seconds between pops.

Stovetop

Every kernel
  1. Heat 1½ Tbsp oil with 3 test kernels, lid on. High heat for Mushroom, medium-high for butterfly.
  2. All 3 popped? Add ¼ cup kernels, crack the lid, and shake or crank steadily.
  3. Off the heat at 2 seconds between pops. Into a bowl, salt while hot.
¼ cup kernels makes 7–8 cups

Hot-air popper

Best kernel: Large Yellow
  1. Preheat 1 minute, if your manual allows. Bowl under the chute.
  2. Add up to ½ cup kernels. No oil, butter or salt inside.
  3. Switch off at 2 seconds between pops. Drizzle melted oil, toss, salt.
¼ cup kernels makes 7–8 cups

Microwave

Butterfly only · never Mushroom
  1. ¼ cup butterfly kernels in a 3-qt glass bowl.
  2. Cover with a microwave-safe plate, upside down.
  3. High for 2½ to 5 minutes, depending on wattage. Stop at 2 seconds between pops.
¼ cup per batch makes 7–8 cups

Baby White. Put a quarter cup of kernels in a 3-quart microwave-safe glass bowl, cover it with a microwave-safe plate turned upside down, and stop when pops slow to about 2 seconds apart. Large Yellow also works. Never microwave mushroom kernels.

Can you microwave mushroom popcorn?

No. Mushroom kernels need fast, even, high heat, and a microwave gives you half-pops. Use butterfly kernels in the microwave.

Which popcorn has the fewest hulls?

Baby White. Every popcorn kernel has a hull, but Baby White's is thin and delicate and breaks into far fewer pieces.

How much popcorn should I make per person?

Figure 2 tablespoons of kernels per person, which makes about 4 cups popped. A quarter cup of kernels makes about 7 to 8 cups.

How should I store popcorn kernels?

Airtight, at room temperature in the pantry. Roll the resealable bag down tight after every scoop. Never store kernels in the fridge or freezer, because the fridge dries them out.
