Large yellow versus baby white

These are the two butterfly varieties we grow, and they are genuinely different eating experiences. Large yellow gives you volume: a bigger kernel expands into a bigger, fluffier, more golden piece, and a quarter cup fills the bowl further. It is the familiar shape and color of theater popcorn, and it stands up to a heavy hand with butter. Baby white is the smaller, more tender, lower-hull option for people who find yellow corn chewy or who are tired of picking hulls out of their teeth.

Neither is better. Yellow is the crowd-pleaser and the value-per-bowl choice; white is the delicate one. If you are feeding a room, buy yellow.

For caramel corn, kettle corn or anything coated, use mushroom kernels instead. Butterfly wings shear off under a coating.

Popping and storing

Two to three tablespoons of oil or beef tallow over high heat until it shimmers, a quarter cup of kernels, lid on, off the heat when popping slows to one pop every second or two. Roll the bag down tight after opening, or decant into an airtight jar.
