The corn

Baby white is a small-kernel white butterfly variety. The small kernel means a proportionally smaller, more tender hull, which is why people describe it as hulless and why it is the usual off-ramp from grocery-store yellow corn. It pops into a winged, irregular shape with the surface area that butter and salt need. It is an eating corn - use mushroom kernels for caramel corn, kettle corn and anything coated.

Storage

Keep the unopened bags cool, dry, out of direct sun and off cold floors. Once a bag is open, roll it down tight or move the kernels to an airtight container. Do not refrigerate.
