Farmer Bob's Organic Steel Cut Oats are whole oat groats chopped into two or three pieces by a steel blade - never steamed, never rolled, never instant. USDA Certified Organic, non-GMO, US grown without glyphosate, farmer direct, in reclosable 1 lb, 2 lb and 5 lb bags.

Steel cut or whole groats? Read this first

We sell both, and they are the same oat at two stages. Steel cut is the groat already cut for you. That cut is the entire product difference and it does two things: it roughly halves the cooking time, and it gives you the coarse, chewy, nubbly porridge texture that steel cut is known for and that rolled oats cannot produce.

  • Buy steel cut if you want porridge on a weekday, want texture rather than mush, and have no interest in processing grain yourself.
  • Buy whole groats if you roll your own oats, sprout, plant, cook oats whole like rice, or are storing food for the long term.

One honest trade-off: cut surfaces expose the oat's oil, so steel cut does not keep as long as an intact groat. Buy the size you will actually use within several months rather than the largest bag available.

What steel cut is good for

  • Hearty morning porridge with a chew that rolled oats never deliver.
  • Overnight and slow-cooker oats - holds structure instead of dissolving.
  • Savory oats - cooked in stock with egg, cheese or greens.
  • Baking - texture in cookies, crisps, breads and granola.

Cooking and storage

Bring 3 cups of water or milk to a boil, stir in 1 cup of steel cut oats, drop to a simmer and cook 20 to 30 minutes, stirring occasionally. Soaking overnight cuts that to about 10 minutes. It roughly triples in volume. Keep the bag sealed, cool, dry and out of the light; reclose tightly or decant into an airtight container after opening.
