Halloween Caramel Corn: One Recipe, Five Spooky Ways (Plus a One-Click Shopping List)

One pan of caramel corn is the start of about five different Halloween treats. Make the base recipe once, then turn it into a candy corn snack mix, pumpkin popcorn balls, or a tray of monster munch. Everything you need from the grocery store is in a one-click list at the bottom.
Why mushroom popcorn makes better caramel corn
Regular popcorn pops into a shape with wings. Stir hot caramel into it and the wings snap off, so you end up with sweet crumbs at the bottom of the pan.
Mushroom popcorn pops into a round ball. There's nothing to snap off, so every piece gets an even coat and stays whole. It's what the caramel corn shops use, and it's what I grow here in Princeton, Kansas.
I use our Signature Easy Pop Mushroom Popcorn. It pops big and round and leaves fewer hulls in your teeth.
Farmer Bob's baked caramel corn
Makes about 6 quarts. Hands-on time 20 minutes, oven time 1 hour.
What you need
- 3/4 cup mushroom popcorn kernels (about 6 quarts popped)
- 3 tablespoons oil for popping (coconut oil or beef tallow both work well)
- 1 cup (2 sticks) butter
- 2 cups packed light brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
How to make it
- Pop the corn. Pop the kernels on the stovetop in two batches so the pot isn't crowded. Mushroom popcorn needs room and good heat to pop round. Pour it into your biggest bowl or a roasting pan and pick out any unpopped kernels.
- Heat the oven to 250°F. Line two rimmed baking sheets with parchment.
- Make the caramel. In a heavy saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup and salt. Bring it to a boil, stirring the whole time. Then stop stirring and let it boil for 4 to 5 minutes.
- Add the soda. Take the pan off the heat and stir in the baking soda and vanilla. It will foam up and turn lighter. That foam is what makes the coating crisp instead of tooth-breaking.
- Coat. Pour the caramel over the popcorn right away and stir until every piece has some on it. It doesn't have to be perfect yet. The oven finishes the job.
- Bake for 1 hour, stirring every 15 minutes. Each stir spreads the caramel a little more evenly.
- Cool on the pans, then break it apart. Store it in a container with a tight lid and it stays crisp for a week or more.
Careful: hot caramel burns. Keep little hands back until it's out of the oven and cool.
Five ways to make it Halloween
1. Harvest mix

Once the caramel corn is completely cool, toss it with candy corn and salted peanuts. Wait until it's cool, because candy corn melts in a warm pan. It's sweet, salty and gone in about ten minutes. For a nut-free bowl, swap the peanuts for pretzels.
2. Pumpkin popcorn balls

Skip the oven for this one. Add a few drops of orange food coloring to the caramel with the vanilla, pour it over the popcorn, and let it cool for 3 or 4 minutes. Butter your hands and press it into balls. Push a small chocolate candy in the top for a stem and add a green candy for a leaf.
3. Monster munch

Spread cooled caramel corn (or plain popped corn) on a parchment-lined pan. Drizzle it with melted white chocolate or orange candy melts, then scatter candy eyeballs, mini pretzels and peanut butter candies over the top before it sets. Break it into chunks.
4. Ghost popcorn balls

These use marshmallow instead of caramel so they stay white. Melt 1/4 cup butter with a 10 oz bag of mini marshmallows, stir in about 3 quarts of popped corn, and shape with buttered hands. Two candy eyes and a chocolate chip mouth make the ghost.
5. Popcorn hands
Drop one candy corn into each fingertip of a clear food-service glove, fill the glove with caramel corn, and tie it at the wrist with orange ribbon. Kids love them, and they take about a minute each.
