Start here if you have never had baby white

Butterfly corn pops into an irregular winged shape with lots of surface area, which is what catches butter and salt. Our white variety is a small-kernel, tender type - what the trade calls baby white. It is noticeably more delicate than the yellow corn most people grew up on, and the hulls are small enough that far less of it ends up wedged in your teeth.

Butterfly or mushroom?

Choose butterfly for eating plain, buttered or lightly seasoned. Choose mushroom for caramel corn, kettle corn and anything coated, because those winged arms shear off the moment you tumble them in sugar. Most kitchens end up keeping both.

Popping and keeping it

Two to three tablespoons of oil or beef tallow over high heat until it shimmers, a quarter cup of kernels, lid on, and off the heat when the popping slows. Salt while the surface is still hot enough to hold it. Screw the lid back down between uses - the moisture sealed inside the kernel is what makes it pop, and an open container in a dry kitchen slowly costs you that.
