The value format

This is the cheapest way to buy two pounds of our baby white. The bag is the whole difference: no rigid tub, so you pay less and you should either use it within a few weeks or transfer it to an airtight container once opened. Buy the tub instead if the corn is going to sit on a shelf for months between movie nights.

Baby white, and why it is different

Baby white is a small-kernel butterfly variety. Two things follow from the small kernel. First, the hull is proportionally smaller and more tender, so far less of it ends up stuck in your teeth - this is the single most common reason people abandon grocery-store yellow corn. Second, the popped piece is more delicate and less chewy, which makes it easier to eat by the bowl.

• Oil poppers and stovetop - the method that gives the best flavor.
• Air poppers - light winged pieces suit dry heat well.
• Microwave in a bowl with a plate over it - no bag, no chemicals.
• Buttered and salted, which is what butterfly corn is for.

Popping and storing

Two to three tablespoons of oil or beef tallow, heated until it shimmers, a quarter cup of kernels, lid on, off the heat when popping slows. Roll the bag down tight after opening or decant into a sealed jar - popcorn pops on the moisture inside the kernel, and an open bag in a dry kitchen quietly costs you that.
