Is spelt the right grain for you?

Spelt is an ancient relative of modern wheat with a nuttier, slightly sweet flavor and a more delicate gluten. It is not gluten free, so it is not suitable for celiac diets, but many bakers reach for it when they want wheat flavor with a softer crumb.

Working with spelt gluten

Spelt's gluten is more extensible and less elastic than hard red wheat. Practically, that means shorter mixing and gentler handling. Overworked spelt dough goes slack and will not hold its shape. Start with less water than a hard wheat recipe calls for and add more only if the dough feels tight.

Cooking and storage

To cook the whole berries, rinse and simmer 1 cup of spelt in 3 cups of water for 50 to 60 minutes until chewy-tender, then drain. Soaking overnight cuts that time roughly in half. Store the unopened bag in a cool, dry, dark place. Whole berries keep far longer than flour because the oils stay sealed inside the kernel, which is the main reason to mill at home rather than buy flour. Once opened, press the air out and reclose the bag or transfer to an airtight container.
