Is soft white the right wheat for you?

Soft white is the pastry wheat. It is lower in protein and milder in flavor than hard red, and its weaker gluten is a feature, not a shortfall: less gluten means a more tender crumb.

• Cookies, muffins and quick breads - tender results without a tough, chewy bite.
• Pie crust and biscuits - flaky rather than bready.
• Pancakes and waffles - light texture and a pale, sweet crumb.
• Home milling - mills to a fine, light-colored whole wheat pastry flour.
• Blending - soften a hard red bread flour by cutting in 20 to 30% soft white.

Why the color and class matter

The "white" in soft white refers to the bran, not the flour. A paler bran means milder flavor and a lighter loaf, so whole grain baking made with soft white is far less assertive than whole grain made from red wheat. That makes it the easiest whole wheat to introduce to people who say they do not like whole wheat.

Milling, cooking and storage

Mill fresh in small batches; whole wheat flour loses its sweetness within weeks as the germ oil oxidizes, while intact berries stay good for years. For cooked berries, simmer 1 cup in 3 cups of water for roughly 50 to 60 minutes until chewy. Store the unopened bag somewhere cool, dry and dark. After opening, press out the air and reclose the bag or transfer to an airtight container.
