Golden or brown? The honest answer

We grow both and the nutritional difference is small - both carry the same omega-3 fatty acid, the same lignans and the same soluble fiber in broadly similar amounts. What actually separates them is how they taste and how they look:

• Golden flax is the milder one. Softer, subtler, closer to a light nut, and it does not shout in the finished food. Its pale color leaves light-colored batters, doughs and smoothies looking the way they should.
• Brown flax is earthier and more assertive, and it visibly darkens whatever it goes into.

Choose golden when the flax should be invisible: white and light wheat breads, pancakes, pale muffins, smoothies, yogurt bowls, and anything you are feeding to someone who has previously objected to the taste of flax. It is also the usual pick for cooking for children.

Uses

• Flax egg - 1 tablespoon ground golden flax plus 3 tablespoons water, rested 5 minutes, replaces one egg without speckling the batter.
• Light breads, rolls and pancakes.
• Smoothies and yogurt - blends in without the color shift.
• Baking with a fiber boost that nobody notices.
• Sprouting and planting - raw and untreated.

The one rule that matters

Grind it before you eat it. Whole flaxseed passes through the digestive tract largely intact, so unground flax delivers very little of what you bought it for. Grind small batches fresh in a coffee or spice grinder; once ground, the oil starts oxidizing within weeks. Whole seed kept sealed, cool and dry holds for a year or more, which is the whole reason to buy it whole rather than as meal. Refrigerate any ground flax you keep.
