A one pound tub of yellow mushroom popcorn kernels - about eight stovetop batches from a quarter-cup scoop. The smallest size we sell this variety in, and the right one for finding out whether mushroom corn changes how your caramel corn turns out.
Start here before you commit
Most people arrive at mushroom corn with a specific problem: their homemade caramel corn or kettle corn shatters, and the bottom of the bowl fills with sweet crumb. One pound is enough to make several batches and see the difference for yourself before buying two, eight or fifty.
It is also the size that works as a gift on its own. A single tub is presentable, sealed and reclosable, so it goes straight into a basket without repacking.
What makes it different
Mushroom kernels pop into a dense, close to spherical ball. Butterfly corn pops into an irregular winged shape, and those wings are what break off the instant you tumble popcorn in hot sugar. A ball has nothing to break. That is the whole reason commercial caramel corn is made from mushroom corn, and the reason your batches will hold together the way store-bought does.

For plain buttered popcorn, butterfly is the more tender choice and holds seasoning better. Mushroom is the coating corn.
Popping it
Do not crowd the pan; mushroom needs space to expand into a full sphere. Two to three tablespoons of oil or beef tallow heated until it shimmers, a quarter cup of kernels, lid on, off the heat when popping slows. Screw the lid back down between uses - the moisture sealed inside each kernel is what makes it pop.

Deb D. It was OK! I let the popper heat for 3 or 4 minutes before I put the popcorn in as instructed. I felt the popcorn was a little tough and there were LOTS of hulls floating around. I actually like the store brand popcorn better.
