We sell the same baby white corn in a 2 lb bag for less. The tub costs more and earns it in two ways: a screw-down lid that actually keeps kitchen humidity out over months, and a rigid wall that stacks and does not tip a pound of kernels across the shelf. If the corn will be gone in a few weeks, buy the bag. If it lives on the shelf between movie nights, buy the tub.

What baby white is

White butterfly is a small-kernel, tender variety. It pops into the irregular winged shape that gives butter, salt and fine seasoning somewhere to land, and its hulls are small enough that most people simply stop noticing them. That last part is why customers switch from grocery-store yellow corn and stay switched.

Popping it

Two to three tablespoons of oil or beef tallow over high heat until it shimmers, a quarter cup of kernels, lid on, and off the heat when popping slows to one pop every second or two. Salt immediately, while the surface still holds it.
