Why the tub

If you pop weekly rather than daily, the tub is worth the premium. If you pop through corn fast enough that storage is not a concern, the bag is the cheaper way to buy the identical kernel.

What mushroom corn is for

Mushroom kernels pop into a dense round ball instead of the winged, irregular shape butterfly corn makes. There are almost no fragile arms to snap off, so the pieces survive being tumbled, coated and bagged.

Popping it

Mushroom needs room to expand into a full sphere, so do not crowd the pan. Two to three tablespoons of oil or beef tallow, heated until it shimmers, then a quarter cup of kernels with the lid on. Pull it off the heat when popping slows to one pop every couple of seconds.
