Ball-shaped, and why that matters

Mushroom corn pops into a dense, round, close to spherical piece. Butterfly corn pops into an irregular winged shape. Those wings are fragile, and the moment you tumble winged popcorn in hot caramel or kettle sugar they snap off and settle as sweet crumb in the bottom of the bag. A mushroom ball has nothing to snap. That is the entire reason the commercial caramel corn trade runs on mushroom corn, and the reason your homemade batches will look and hold like the ones you buy.

For plain buttered popcorn, most people still prefer butterfly. It is more tender and its wings hold seasoning better. Mushroom is the coating corn, not the everyday eating corn.

Bag or tub

This is the same kernel we pack in 2 lb tubs, minus the rigid reclosable container. Buy the bag if you are working through it within a few weeks or will decant it. Buy the tub if it sits on a shelf for months.

Popping it

Give it room - a crowded pan stops the kernels expanding into full spheres. Two to three tablespoons of oil or tallow, heated until shimmering, a quarter cup of kernels, lid on, off the heat when popping slows.
