About the corn

White butterfly, sometimes sold as baby white: a small, tender kernel that pops into a winged shape with plenty of surface area for butter and salt, and with hulls small enough that most people stop noticing them. It is the eating variety. For caramel corn, kettle corn or anything coated, use mushroom instead - butterfly wings break off under a coating tumbler.

Storage

Keep unopened tubs cool, dry and out of direct sun and they hold their popping performance for years. Reseal the one in use every time. Do not refrigerate.
