The corn

Yellow mushroom kernels pop into dense, round, close to spherical pieces with nothing fragile sticking out. That structure is what lets them survive a coating tumbler, a bagging step and a delivery box without shattering, which is why commercial caramel corn is almost always mushroom corn. Butterfly corn in the same process sheds its wings and turns a real share of the batch into sweet crumb.

For eating plain with butter and salt, use butterfly instead - it is more tender and its winged shape catches seasoning better.

Storage

Cool, dry, dark, off cold floors, lids down. Kept that way it holds for years. Do not refrigerate.
