Choosing your variety

Mushroom pops into a dense round ball with no fragile arms. Pick it if you are making caramel corn, kettle corn, chocolate or cheese corn, or filling gift tins - anything where the popcorn gets coated or handled and must not shatter.

Butterfly pops into an irregular winged shape with far more surface area. Pick it if the popcorn is being eaten plain, buttered and salted. The wings are what hold seasoning, and the pieces are more tender to eat.

Storage

Keep the bulk bag closed, indoors, off cold concrete, away from heat vents and out of direct sun. Refill the tub as needed and keep its lid screwed down. Never refrigerate popcorn.
