Six pounds is about right for someone who makes caramel or kettle corn in batches through the autumn and holidays, or who runs a bake sale, market stall or fundraiser table. Three sealed bags rather than one large one means the corn you open in December was still factory-sealed in October - which matters, because popping performance is a function of the moisture still sealed inside each kernel.

Why mushroom for anything coated

The popped piece is a dense round ball with no fragile arms. Butterfly corn, tumbled in hot sugar, sheds its wings and turns a real percentage of your batch into crumb. Mushroom survives coating, tossing, bagging and transport intact, which is why it is the trade standard for caramel corn. Use butterfly instead when the popcorn is being eaten plain with butter and salt.

Storage

Unopened bags keep for years somewhere cool, dry, dark and off cold concrete. Once open, roll the bag down tight or decant into an airtight container. Never refrigerate popcorn.
